Chefs and cooks, what recipe from work would you change to make it taste better?

Now, I'm not asking for your secret recipes, but only what ingredients you would add/take away or change from a dish that you already make, but would like to change it? We make killer, homemade Meat at the Winery, but I would add a couple of things to make them tastier, in my humble opinion. Thanks for answering and have a great Sunday!
